VENETO- IL CIBO E VINO Venice has been a major European port since the days of Marco Polo. Spices like cinnamon and clove, imported from the orient, are prevalent in local cuisine. Risotto is a staple of the Venetian diet, made variously with wild game ragu, "ink" flavored with shellfish, or with seasonal, local wild mushrooms or vegetables. The third largest wine producing region in Italy, Veneto houses 12 DOC and 2 DOCG designations. Several grape varietals are grown, including Prosecco, a refreshing effervescent wine. Mix it with peach nectar and you have a classic Venetian Bellini Cocktail, a great aperitivo!
